This truly restaurant-style dish is surprisingly easy to make at home. The pasta absorbs a rich, creamy garlic sauce and pairs perfectly with tender shrimp, creating a simple yet elegant meal
250 g pasta (I used egg noodles)
300 g frozen shrimp
1 medium onion
3 cloves garlic
1/2 cup white wine (120 ml)
2 cups heavy cream 35% (480 ml)
1/3 cup grated Parmesan
butter and vegetable oil for frying
salt, pepper, a pinch of nutmeg
fresh herbs (optional)
Cook the pasta in salted water until done, then drain
While the pasta is cooking, dice the onion and finely chop the garlic
Thaw the shrimp and pat dry with a paper towel
Sauté the shrimp in butter for 1–2 minutes on each side until cooked, season with salt and pepper, then set aside
In the same pan, add vegetable oil and onion, cook until golden
Add garlic and cook for another couple of minutes
Pour in the white wine and let it reduce (2–3 minutes)
Add cream, salt, pepper, and nutmeg, and simmer on low heat until slightly thickened (3–5 minutes)
Add Parmesan and mix well
Add pasta and shrimp to the sauce and toss together
Garnish with fresh herbs and extra Parmesan if desired
