A vibrant dish originating from the Hawaiian Islands. The essential components of poke are lightly marinated raw fish served over rice, with a variety of vegetable and sometimes fruit toppings. The bowl is finished with a sauce and sprinkled with black sesame seeds
Sushi rice (short-grain rice with higher starch content is best)
Poke is often described as “lazy sushi.” Traditionally it is made with fresh sashimi-grade salmon or tuna, though many variations exist. If you are not confident about raw fish quality, you can use cooked, baked, or smoked salmon instead.
If using raw salmon, cut it into small cubes and marinate for about 1 hour in equal parts soy sauce and sesame oil
Avocado
Fresh cucumber
Radish (optional)
Carrot (optional)
Pickled ginger (optional)
Edamame beans (optional)
Green onions
Mango (most common)
Pineapple, papaya, kiwi, or orange can also be used
Any tropical fruit that adds a sweet note works well
Black sesame seeds (toasted)
Nori seaweed sheets
Soy sauce + sesame oil (classic combination)
Or sweet chili sauce / citrus soy sauce / ginger-lime soy dressing
I used a mix of soy sauce and sesame sauce
Cook the rice until done
Place warm rice in a bowl
Add marinated fish, vegetables, and fruit on top
Drizzle with sauce
Sprinkle with black sesame seeds and nori
Each component can be eaten separately, or everything can be mixed like a salad. Some people gently toss the bowl so the sauce is evenly distributed before eating
