I don’t think any other kind of baking fills the house with quite the same delicious, warm, comforting aroma as banana baking. Here’s another very successful banana cake recipe. The cake is soft, perfectly moist, and fragrant, with little bits of walnuts and chocolate throughout
Ingredients for two 10 × 20 cm (4 × 8-inch) pans
2 eggs
1/2 cup sugar (125 g)
1/4 cup vegetable oil (60 ml)
1/4 cup sour cream (60 ml)
3 very ripe bananas
1 3/4 cups flour (220 g)
1/2 tsp cinnamon (optional)
1/2 tsp baking soda
1 tsp baking powder
1/2 cup chocolate chips
1/2 cup finely chopped walnuts (optional)
Steps
Beat the eggs with the sugar using a mixer
Add the vegetable oil, sour cream, and bananas mashed with a fork, and mix
Add the dry ingredients and mix
Add the chocolate chips, reserving a few for the top, and the walnuts, and mix. Pour the batter into the pans and sprinkle with the reserved chocolate chips
Bake in a preheated oven at 180°C (350°F) for 45 minutes
