Hot, comforting dishes are especially welcome in winter. These Thai-style meatballs are just the kind of dish to warm you up, served in a fragrant, slightly spicy sauce made with coconut milk and red curry paste
Ingredients
For the Meatballs
500 g ground chicken
1 egg
1 small onion
1/4 cup breadcrumbs
Salt, pepper
For the Sauce
1 tbsp red curry paste (adjust the amount according to how spicy the paste is)
1 can (400 ml) coconut milk
1 tsp fish sauce (can be substituted with soy sauce)
1 tsp brown sugar
A pinch of salt
A handful of finely chopped cilantro
Steps
Meatballs
Blend the onion in a food processor or blender
Mix the ground chicken with all the remaining ingredients
Shape the mixture into meatballs using wet hands
Arrange the meatballs on a parchment-lined baking sheet and bake in a preheated oven at 200°C (400°F) for 20 minutes
While the meatballs are baking, prepare the sauce
Sauce
Add the curry paste to a skillet and, stirring, gradually pour in the coconut milk
Add the remaining ingredients and simmer over low heat for 10 minutes
The sauce will thicken slightly during this time
Add the cooked meatballs to the sauce and simmer for another 5 minutes
Sprinkle with cilantro before serving
