This Russian-style farmer's cheese casserole is simple, comforting, and surprisingly delicious. It has a soft, tender texture and a lightly sweet flavor, with raisins baked throughout. I topped this version with a simple strawberry sauce and fresh berries, which makes it especially delicious and gives the casserole a beautiful finish
500 g farmer's cheese
3 eggs
1/2 cup sour cream (120 ml)
1/3 cup sugar (80 g)
3 tbsp semolina
1/2 cup raisins
6 frozen strawberries
1 tsp sugar
Blend all the ingredients, except the raisins, until smooth
Add the raisins
Grease the baking dish with butter and lightly sprinkle with semolina
Bake in a preheated 180°C (350°F) oven for 40 minutes
Place the frozen strawberries in a small saucepan, heat over medium heat, and mash them with a potato masher
Add the sugar and stir until completely dissolved, then remove from the heat
Pour the strawberry sauce over the cooled casserole and decorate with fresh berries if desired
