Kani Salad has become popular far beyond Japan and is now commonly found on the menus of sushi restaurants. Despite having only a few ingredients, it is surprisingly delicious and unique. The secret to this salad is the crab sticks, which are pulled apart into thin strands, giving it its signature light and delicate texture. My version contains just three main ingredients. Sometimes I also add seaweed
Ingredients
250 g crab sticks
1 medium cucumber
2 tbsp tobiko
1.5 tbsp mayonnaise
Steps
Pull the crab sticks apart into thin strands
Cut the cucumber into thin matchsticks
Add the tobiko
Toss with mayonnaise, mix gently, and serve immediately or chill slightly before serving
