Spritz cookies are delicate, crumbly butter cookies that get their name from the method used to shape them. The soft dough is piped through a cookie press or a pastry bag with a piping tip, creating beautiful decorative shapes. For best results, the dough should be soft, smooth, and easy to pipe
I’ve been using this type of cookie press for many years to make Spritz cookies -
225 g butter (room temperature)
1/2 cup sugar (125 g)
2 egg yolks
1 tsp vanilla essence
2 + 1/4 cups flour (280 g)
a pinch of salt
Beat butter with sugar using a mixer
Continue mixing and add the egg yolks and vanilla
Add flour and salt and mix well
The dough will be soft, elastic, and slightly sticky
Pipe the dough onto an unlined baking tray (no parchment paper, otherwise the cookies will not hold their shape; lightly grease the tray with butter) using a cookie press or a piping bag with a tip
Bake in a preheated 180°C (350°F) oven for 12–14 minutes
Decorate the cookies as desired
