Classic homemade syrniki are a simple but much-loved breakfast, made especially delicious when prepared with good-quality farmer’s cheese. Soft and tender on the inside with a light golden crust, they pair perfectly with sour cream, honey, maple syrup, or jam
Ingredients
1 kg farmer’s cheese (4%)
1/3 cup sugar (80 g)
2 eggs
1 cup flour (125 g) + extra for coating
a pinch of salt
1/2 cup raisins
Steps
Process the farmer’s cheese until smooth (using a blender or meat grinder)
Add all remaining ingredients and mix into a dough
Generously dust a plate with flour
Shape the dough into small balls and coat them in flour
Gently flatten each ball into syrniki shape
Fry over medium heat in vegetable oil until golden brown on both sides
Serve with sour cream, honey, maple syrup, or jam
