This is one of those “guests are at the door” kind of cakes. It takes no more than 5 minutes to prepare. While the oven turns it into a cherry miracle, you can easily make tea or coffee. By the time guests arrive, the house is filled with the irresistible aroma of fresh cherry baking
To get the right result — a thin layer of batter and a generous fruity filling — it’s best to use a large baking pan. The batter should spread in a thin layer across the bottom of the pan. I used a 25 × 35 cm (10 × 14 inch) baking sheet
Ingredients
3 eggs
3/4 cup sugar (190 g)
1/2 cup vegetable oil (120 ml)
1 cup flour (125 g)
1 tsp baking powder
2 cups cherries (frozen or canned)
powdered sugar (optional)
Steps
Beat eggs with sugar using a mixer
Add vegetable oil and mix well
Add flour and baking powder, mix until combined
Spread cherries on the bottom of the baking pan (do not thaw frozen cherries)
Pour the batter on top — it may not fully cover the cherries in some places, this is normal
Bake in a preheated oven at 180°C (350°F) for 35–40 minutes
Let cool and dust with powdered sugar if desired
