These delicious and wholesome broccoli cheese balls are surprisingly easy to make. Simply blanch the broccoli, chop or blend it, mix it with the remaining ingredients, roll into balls, and bake. They are especially tasty when served warm with a dollop of sour cream, but they are just as enjoyable cold
Ingredients
1 head of fresh broccoli (about 2 cups cooked and finely chopped)
2 eggs
1/3 cup grated marble cheese
1/3 cup grated Parmesan cheese
1/2 cup breadcrumbs (I used a mixture of regular breadcrumbs and panko)
a few sprigs of parsley
salt and pepper to taste
Steps
Place the broccoli in boiling water for 2 minutes, then immediately rinse with cold water
Finely chop the broccoli and parsley, or pulse them in a food processor
Add the eggs, both cheeses, and the breadcrumbs
Season with salt and pepper and mix well
Roll the mixture into small balls
Place them on a baking sheet lined with parchment paper
Bake at 180°C (350°F) for 20–25 minutes
After about 15 minutes, you can turn the balls over for more even browning
Serve with sour cream or your favorite dipping sauce
