This hearty split pea soup with smoked meat is quick and easy to make, especially in a pressure cooker. I like to use a smoked turkey leg, but you can substitute smoked pork loin, ribs, or a combination of smoked sausages
Ingredients
1 1/2 cups green split peas
2–2.5 L boiling water
3 strips of bacon
1 smoked turkey leg
1 medium onion
1 medium carrot
3 celery stalks
2 small potatoes
3 cloves garlic
Fresh herbs
Salt, pepper, coriander, a little nutmeg, bay leaf, and whole peppercorns
Steps
Dice the onion, carrot, celery, bacon, and turkey
Fry the bacon in a little vegetable oil until it renders its fat, then add the vegetables and turkey and cook, stirring, until the onion is golden
Cut the potatoes into cubes
Rinse the split peas under cold water
Add the potatoes and split peas to the sautéed mixture, pour in the boiling water, season with salt and spices
Set the pressure cooker to cook for 8 minutes
Squeeze the garlic into the hot soup and add the fresh herbs
If you don't have a pressure cooker, the order of cooking changes. First, add the split peas to boiling water and cook for about 30 minutes. Then add the sautéed vegetables with the smoked meat and the potatoes, along with the salt and spices. The total cooking time is about 40 minutes
