Piccata is an Italian word used to describe a method of cooking in which meat or chicken is sautéed and served in a sauce. Today, I’ll show you how to make chicken piccata using chicken breasts. The secret is all in the sauce, which makes the chicken incredibly tender and juicy
Ingredients
4 chicken breasts
1/2 tsp salt
1/4 tsp black pepper
3 tbsp flour
1 1/2 cups frozen vegetables (I used carrots, green peas, and corn)
Vegetable oil for frying
For the Sauce
2 tbsp lemon juice
1/2 cup white wine
1/2 cup chicken broth
2 tbsp butter
Steps
Pound the chicken breasts to flatten them
Combine the salt, pepper, and flour
Coat the chicken breasts in the flour mixture
Cook over medium heat in vegetable oil in a well-heated pan, about 4–5 minutes per side
Remove the chicken breasts from the pan and cut them into pieces
Reduce the heat, add the lemon juice and wine to the pan, and simmer for 2 minutes
Add the chicken broth and butter and simmer for another 1 minute
Add the frozen vegetables and simmer for another 1 minute, stirring occasionally
Return the chicken pieces to the pan, season with a little salt and pepper, and toss to combine
