An elegant summer appetizer where sweet juicy peaches, salty prosciutto, and creamy burrata come together on a crisp slice of baguette. I used my favourite burrata this time, but it can easily be replaced with ricotta or any soft creamy cheese you like
Baguette
1–2 peaches (depending on size)
5–6 thin slices prosciutto
1 ball burrata (about 125 g)
a small handful of mint or basil
1–2 tbsp balsamic glaze
1 tbsp olive oil
Brush baguette slices with olive oil
Toast in a pan or oven until crisp and golden
Add about 1 tsp of burrata to each slice
Top with thin peach slices
Add a small piece of prosciutto on top
Sprinkle with finely chopped mint or basil
Just before serving, drizzle lightly with balsamic glaze
Option: instead of balsamic glaze, you can drizzle a little honey and finish with a pinch of flaky sea salt
