Once upon a time, there was a Canadian hockey player named Tim Horton. He opened a chain of coffee shops and named it after himself, and today Tim Hortons is almost as much a symbol of Canada as the maple leaf and hockey. Coffee, doughnuts, and muffins were there from the beginning and remain Canadian favourites to this day. Personally, I can hardly imagine my day without a cup of Tim Hortons coffee. But today, it’s not about the coffee — it’s about delicious, fragrant muffins with that signature “top,” just like the ones at Tim Hortons
125 g butter, at room temperature
3/4 cup sugar (180 g)
2 eggs
2 cups flour (250 g)
2 tsp baking powder
Pinch of salt
3/4 cup milk (175 ml)
1 cup blueberries (I used frozen)
Mix the flour, baking powder, and salt
Separately, whisk the butter and sugar
Continuing to whisk, add the eggs one at a time
Add the milk (the mixture will look curdled)
Make a well in the flour and, stirring, pour in the liquid mixture
Add the blueberries and mix
Line a muffin pan with paper liners
Fill the liners to the top with batter
Bake in a preheated oven at 180°C (350°F) for 25–30 minutes
