A bright and fresh tomato soup that doesn’t require waiting for summer’s ripe, juicy tomatoes. It’s warm, comforting, and especially delicious served with grilled cheese sandwich
1 medium onion
2 cloves garlic
1 can crushed tomatoes in their juice (800 ml)
small bunch of basil
1 cup chicken/vegetable broth (240 ml)
1 tsp sugar
1/4 cup cream (any fat content, 60 ml)
1/4 cup grated Parmesan
salt, pepper
vegetable oil + butter for frying
Dice the onion and finely chop the garlic
Sauté the onion in a mix of vegetable oil and butter until golden
Add garlic and sauté for another 30 seconds
Add tomatoes, broth, and finely chopped basil
Add sugar, salt, and pepper to taste
Simmer on low heat for 2–3 minutes
Transfer the mixture to a bowl and blend until smooth using an immersion blender
Return to the pan, add cream and Parmesan
Warm through on low heat for a couple of minutes
