These pancakes are light and fluffy, yet still quite filling — the perfect weekend breakfast. I experimented with many different pancake recipes before finally finding the one I like best. Over time, I also discovered a few tricks for achieving that smooth, evenly golden surface
Pancakes should be cooked on a completely dry skillet, without any oil. That’s what gives them their beautiful golden color
The batter should be poured quickly so the surface cooks evenly, and the pancake should be flipped as soon as bubbles begin to appear on top.
2 eggs
3 tbsp sugar
30 g butter (room temperature)
1 1/4 cups milk (300 ml)
1.5 cups flour (200 g)
1 tsp baking powder
Place all ingredients into a mixer bowl and beat until smooth
Heat a skillet well
Quickly pour the batter onto the skillet using a ladle
Flip the pancake as soon as bubbles begin to appear on the surface and cook the other side until golden brown
