This is a dish we always order when going to a Chinese restaurant. Pieces of chicken and vegetables are stir-fried, then briefly simmered in a sweet and sour sauce with pineapple chunks added. It is usually served with rice and is perfect for anyone who enjoys bold and slightly exotic flavours
3 chicken breasts
1 large onion
1 medium carrot
2 sweet bell peppers
3 garlic cloves
5 tbsp soy sauce
3 tbsp starch
salt, pepper
vegetable oil for frying
540 g canned pineapple in juice
1/4 cup brown sugar
1 tbsp starch
4 tbsp soy sauce
3 tbsp ketchup
1/4 cup apple cider vinegar (60 ml)
1 cup pineapple juice (240 ml)
green onion and sesame seeds for garnish (optional)
Cut chicken, bell peppers, and onion into cubes, carrot into half-moons, and finely chop garlic
Lightly season chicken with salt and pepper, add soy sauce and starch, and mix
While the chicken is marinating, prepare the sauce
Mix sugar with starch
Add soy sauce, ketchup, and vinegar
Gradually pour in pineapple juice while stirring
Fry chicken in vegetable oil over medium heat until cooked, then remove from the pan
Fry onion until translucent, add remaining vegetables, and cook for 3 minutes
Pour in the sauce and bring to a boil
Add chicken and pineapple, and simmer for 2 minutes
Optionally garnish with sesame seeds and green onion
