These crumbly shortbread cookies can be made with beautiful patterns using cookie stamps. Not only are they delicious, but the process itself is also very enjoyable — especially when kids are involved. This time, we used stamps with winter-themed designs, making them extra festive and fun
225 g butter (room temperature)
1 cup brown sugar (200 g)
1 egg
1 tsp vanilla
2 2/3 cups flour (330 g)
1 tsp baking powder
Beat butter with sugar using a mixer
Continue mixing and add the egg and vanilla
Add flour and baking powder
Knead the dough, wrap it in plastic wrap, and refrigerate for 1 hour
Remove dough from the fridge and let it rest for about 10 minutes
Roll dough into balls about the size of a tennis ball
Place balls on an ungreased baking tray and press each one using a cookie stamp
Bake in a preheated 180°C (350°F) oven for 12–14 minutes
