Some recipes take us right back to childhood. These nut-shaped cookies filled with dulce de leche are one of those recipes. They were once a true staple of holiday tables. We had far fewer ingredients and recipes to choose from back then, but somehow everything we made for the holidays tasted so good! Even today, with such an incredible variety of desserts available, it’s nice to return to the old classics once in a while.
And as you can see, my little nut cookies are already ready for the holidays — even a little elf couldn’t resist them :)
When I was a child, we made these cookies using small metal molds. It was a rather time-consuming and tedious process. Today, you can make things much easier with an electric nut cookie maker. It works much like a waffle maker, baking the shells quickly and cleaning up easily. I won’t say making these cookies is quick — there is still some work involved, but they are definitely worth it!
Ingredients
200 g butter (room temperature)
1/2 cup sugar (125 g)
2 eggs
1/2 tsp baking soda, dissolved with vinegar
3 cups all-purpose flour (375 g)
1–2 cans dulce de leche
Steps
Beat the butter and sugar together using a mixer
Continue beating and add the eggs, followed by the baking soda dissolved with vinegar
Add the flour and knead until a dough forms
The dough should be soft, pliable, and rich, but not sticky
Roll the dough into small balls (each ball will become one half of a cookie shell) and bake using an electric nut cookie maker
Once cooled, fill the cookie shells with dulce de leche and press the two halves together
