A simple homemade braised cabbage recipe from my mom. It’s comforting, flavorful, and gets even better with mushrooms added — soft vegetables, rich aroma, and a light tangy note
1/2 medium head of cabbage
1 medium carrot
1 medium onion
1 medium sweet bell pepper
500 g fresh champignons
salt and sugar to taste
Provence herbs
1 tbsp vinegar
vegetable oil
2 tsp tomato paste
black peppercorns
bay leaf
Shred the cabbage
Grate the carrot on a coarse grater
Cut the onion into cubes
Slice the bell pepper into strips
Mix all vegetables together, season with salt, a little sugar, Provence herbs, and vinegar
Mix well with your hands, gently squeezing, and add a little vegetable oil
Cook in a skillet over low heat with sunflower oil, covered, stirring occasionally, for about 20 minutes
While the cabbage is cooking, slice the mushrooms and sauté them in vegetable oil until golden
Add mushrooms to the cabbage, add tomato paste, and mix
Add bay leaf and black peppercorns, adjust salt if needed
Cover and simmer for another 5 minutes
