Delicate buttery shortbread cookies filled with jam. Depending on the type of jam, the cookies turn out slightly different every time — tangy, sweet, or bursting with berry flavor. I used decorative cookie cutters, but if you do not have any, you can simply cut circles or squares from the dough and sandwich them together with jam
200 g butter
1/2 cup sugar
2 egg yolks
2 tbsp lemon juice
2 tbsp orange juice
2.5 cups flour
1 tsp baking powder
favorite jam or preserves
Beat softened butter with sugar and egg yolks using a whisk
Add the juices and gradually mix in the flour and baking powder, forming a soft elastic dough
Shape the dough into a ball and chill in the refrigerator for 30 minutes
Roll out the dough to about 2–3 mm thickness
Cut out cookie shapes, including matching shapes with holes in the center
Place a small amount of jam onto each whole cookie
Top with the cut-out cookies
Bake in a preheated 180°C (350°F) oven for about 15 minutes
