1 medium onion
1 medium carrot
2.5 cups broccoli florets
butter for frying
1/4 cup flour (30 g)
1.5 cups broth or boiling water (360 ml)
1 cup milk (240 ml)
1 cup heavy cream (240 ml)
150 g cheddar cheese
salt and black pepper to taste
Dice the onion
Cut the carrot into thin strips
Grate the cheddar cheese on a coarse grater
Sauté the onion and carrot in butter until the onion becomes golden
Add the broccoli
Sprinkle with flour and stir well
Pour in the broth, milk, and cream
Bring to a boil, reduce the heat, and simmer for about 5 minutes
Season with salt and black pepper
Add the cheese, stir until melted, and remove from heat
