A homemade version of the famous Cinnabon buns. Anyone who has tried these soft, fragrant cinnamon buns at least once understands how this bakery became so popular with essentially just one signature pastry on the menu
Ingredients
1 cup warm milk (240 ml)
1/4 cup melted butter (56 g)
1 egg
3 tbsp sugar
1 tsp salt
3 cups flour (375 g)
2 1/4 tsp dry yeast (6.5 g)
1 cup brown sugar (200 g)
2 tsp cinnamon
50 g butter, softened
100 g Philadelphia cream cheese
1 cup powdered sugar (125 g)
1/4 cup milk (60 ml)
For kneading the dough, I use a bread machine. I simply place all the ingredients into the bowl, and 90 minutes later the dough is ready. For those who do not use a bread machine, a hand-kneading method is also included below.
Warm the milk slightly
Pour about 1/4 cup of the milk into a small bowl, add 1 tbsp sugar and the yeast, and let sit for 10 minutes
Add the egg, sugar, and melted butter to the remaining milk
Mix the flour with salt
Pour the liquid ingredients into the flour and knead using a stand mixer for about 7 minutes. The dough will be slightly sticky
Cover the bowl with plastic wrap and let the dough rise for 1 hour, until doubled in size
Roll the dough out on a lightly floured surface into a rectangle about 3–5 mm thick
Place the ingredients into the bread machine in the order recommended by the manufacturer
In my bread machine, liquid ingredients go in first, then dry ingredients and flour, with the yeast added last
Run the “Dough” cycle
Roll the finished dough out on a lightly floured surface into a rectangle about 3–5 mm thick
Mix the brown sugar with cinnamon
Spread softened butter over the rolled-out dough
Evenly distribute the filling over the surface
Roll the dough into a log and cut into 12 equal pieces (I use thread for this)
Place the buns into a baking dish, cover with a towel or plastic wrap, and let rise for 30 minutes
Bake in a preheated oven at 190°C (375°F) for 20–25 minutes
Spread the topping over the cooled buns
Beat all topping ingredients with a mixer until smooth
