Tabbouleh is one of the most well-known salads in Middle Eastern cuisine. Traditionally, it is made with bulgur, but quinoa makes it a healthier option and adds a pleasant nutty flavor. So here it is — quinoa, plenty of fresh herbs, juicy vegetables, and a simple lemon dressing
Ingredients
1 cup quinoa (dry)
2 medium cucumbers
1 cup cherry tomatoes, halved
1 sweet pepper
4–5 green onions
1 cup parsley, finely chopped
1/2 cup mint, finely chopped
2 garlic cloves
For the Dressing
1 tsp salt (or to taste)
juice of 1 lemon
3–4 tbsp olive oil
Steps
Cook the quinoa and let it cool completely
Finely chop cucumbers, tomatoes, and sweet pepper
Finely chop green onions, parsley, mint, and garlic
Combine quinoa, vegetables, and herbs
Season with salt, lemon juice, and olive oil
Mix well
Chill in the refrigerator before serving
