Napoleon lovers, this one is for you! This easy way of making everyone’s favorite cake was a complete discovery for me. No fussing with pastry, and your Napoleon can be ready in a maximum of 30 minutes. Of course, you’ll have to be patient while the layers soak up all that delicious custard. That is probably the hardest part of this super-easy recipe
You will need a springform pan to make this cake. The pan can be any size. The smaller the pan, the taller the cake will be.
You’ll also need some sweet puff pastry cookies, such as these palmier cookies
Ingredients
600 g sweet puff pastry cookies (I used palmier cookies)
For the Custard
2 eggs
1/2 cup sugar (125 g)
1 tsp vanilla
4 tbsp flour
2 tbsp cornstarch
800 ml warm milk
80 g butter
Steps
Custard
In a saucepan, whisk the eggs and sugar together
Add the vanilla
Continuing to whisk, gradually add the flour and cornstarch
Place over low heat and gradually pour in the milk
Whisk continuously until the mixture thickens (about 5 minutes)
Remove from the heat, add the butter, and mix well
Cover the custard with plastic wrap, pressing it directly onto the surface, and leave to cool
Assembling the Cake
Remove the bottom from the springform pan
Line the sides of the pan with plastic wrap
Place the pan on a serving plate
Arrange a layer of cookies on the bottom. Break the cookies into pieces if necessary to fill any gaps
Spread a layer of custard over the cookies
Continue alternating layers of cookies and custard
Spread custard over the top layer and sprinkle with cookie crumbs
Refrigerate the cake overnight to allow the layers to soften and absorb the custard
Remove the sides of the pan, peel away the plastic wrap, and sprinkle the sides of the cake with cookie crumbs
