This appetizer has been one of my trusted and favorite recipes for many years. It is very simple to prepare and works perfectly both as an everyday side dish and as part of a festive table. The peppers keep well in the fridge, so the quantity can easily be increased
4 sweet bell peppers
1 garlic clove
a few sprigs of cilantro (optional)
salt to taste
1 tsp vinegar
1 tbsp vegetable oil
Roast the peppers in the oven at 200°C (390°F) for about 20–25 minutes, until the skin is blistered and lightly charred and the peppers become soft
Let the peppers cool, then peel off the skin, remove the stem and seeds. Try to save any juices that have released
Slice the peppers into strips, season with salt, add freshly pressed garlic, vinegar, vegetable oil, and finely chopped cilantro
Transfer to a sealed container and store in the refrigerator
