2 eggs
1 cup sugar (250 g)
3/4 cup kefir (180 ml)
1/2 cup vegetable oil (120 ml)
1 tsp vanilla
2 tsp red gel food coloring
1/2 tsp baking soda, mixed with 1/2 tsp vinegar
1.5 cups flour (190 g)
pinch of salt
1 tbsp cocoa powder
200 g cream cheese (Philadelphia)
1 cup powdered sugar (125 g)
1 cup heavy cream 35% (240 ml)
Beat eggs with sugar using a mixer
While continuing to beat, add vanilla
Add kefir, vegetable oil, and food coloring, mix
Add baking soda mixed with vinegar, mix
Add dry ingredients and mix until smooth
Divide batter into cupcake liners, filling about 3/4 full
Bake in a preheated oven at 180°C (350°F) for about 20 minutes
Beat cream cheese with powdered sugar
While continuing to beat, pour in cream
Whip until thick and creamy texture forms, then pipe onto cooled cupcakes
