I think everyone is familiar with the classic Black Forest cake. But in my opinion, the cookie version deserves just as much attention. Chocolate lovers — this one is for you! Pure chocolate indulgence, and with a surprise inside. Hidden in the center of each cookie is a tangy cherry
Ingredients (makes 24 balls, 2.5 cm each)
3/4 cup all-purpose flour (95 g)
1/2 cup sugar (125 g)
1/2 tsp baking powder
pinch of salt
55 g (4 tbsp) melted butter
1/3 cup cocoa powder (60 g)
1 egg
1 tsp coffee, dissolved in 2 tbsp boiling water
1 tsp vanilla extract
1/3 cup dried cherries
1/3 cup chocolate chips
1/2 cup powdered sugar
Steps
Mix flour, sugar, baking powder, and salt
In a separate bowl, mix melted butter with cocoa, then add egg, coffee, and vanilla
Combine both mixtures and knead into a dough
The dough should be soft enough to roll into balls; if it’s too sticky, add a little flour
Roll into 2.5 cm balls
Press chocolate chips and cherry pieces into each ball (about 3 chips and 1 cherry each, or to taste)
Coat each ball in powdered sugar and place on a baking tray
Bake in a preheated oven at 180°C (350°F) for 15 minutes
During baking, the cookies will crack, creating a powdered sugar “crinkle” effect, with a crisp outside and soft inside
