These trendy and delicious “buns” are a lighter alternative to traditional baked goods — a wholesome, oven-baked dish with no dough, filled with a savoury cheese and farmer’s cheese mixture and wrapped in rice paper
Ingredients (makes 10 spirals)
30 sheets rice paper, 12 cm in diameter
500 g farmer’s cheese
200 g feta cheese
100 g grated cheese
4 eggs
6 green onions
Sesame seed mix, for sprinkling
Steps
Combine the farmer’s cheese, feta, and grated cheese
Separate the egg yolks from the whites and set the yolks aside
Lightly beat the egg whites with a fork and add them to the cheese mixture
Finely chop the green onions and add them to the filling
Mix everything well
Lightly moisten a cutting board with water
Dip the rice paper sheets, one at a time, in warm water. Arrange 3 sheets, overlapping slightly, on the cutting board
Spread a strip of filling down the centre of the rice paper
Roll the rice paper with the filling into a tube, then coil it into a spiral
Brush each spiral with egg yolk and sprinkle with the sesame seed mix
Bake in a preheated oven at 190°C (375°F) for 30 minutes, until golden brown
