Summer is the time for light desserts. This crumble is simple to make, looks beautiful, and tastes like… just “one more spoon and that’s it!” No sugar, no gluten, and no regular flour — just plums, almonds, and a bit of coconut oil
Ingredients
For the filling
15 small yellow plums
1 tsp coconut oil
3 dates
For the crumble
1 cup almond flour
1 tbsp coconut oil
Almond flakes (optional)
Steps
Filling
Cut the plums in half and remove the pits
Finely chop the dates
Melt coconut oil in a pan, add plums and cook over medium heat for 3–5 minutes until soft
Add dates, mix and remove from heat
Crumble
In a bowl combine almond flour and coconut oil
Rub with hands until crumbly texture forms
Place plum filling into a baking dish
Evenly spread almond crumble on top and sprinkle with almond flakes
Bake in a preheated oven at 180°C (350°F) for about 20 minutes until golden
Serve warm with yogurt or a scoop of ice cream
