Goulash soup is a traditional Hungarian dish. It can be served as a meal on its own, or as a side dish, for example, with rice. The vibrant colour and rich flavour of the dish come from the addition of paprika. Use Hungarian paprika. Its delicate aroma and slightly spicy, sweet flavour are what give the goulash its authentic Hungarian touch
Ingredients
500 g beef
2 medium onions
1 medium carrot
3 medium potatoes
1 sweet pepper
3 garlic cloves
1 tbsp tomato paste
1 tsp sugar
1 tbsp paprika
1 tsp salt
a pinch of pepper, a pinch of cumin
1 L broth or water
vegetable oil for frying
Steps
Cut the onions into cubes and sauté in a pan with vegetable oil until golden brown
Finely chop the garlic, add it to the sautéed onions, add the cumin, paprika, tomato paste, and sugar, and cook for another minute, stirring
Transfer the sautéed mixture to a pot
Cut the beef into small pieces and sear in a pan until golden brown
Transfer the beef to the pot, add the potatoes, carrot, and pepper, all cut into cubes
Season with salt and pepper and pour in the broth
Cook the goulash using the pressure cooker setting for 30 minutes
*If cooking the goulash in a regular pot, after adding the beef and broth, simmer the beef until tender (~2 hours), then add the potatoes, carrot, and pepper and simmer for another 15–20 minutes
