Chia seeds have been enjoyed for centuries by the people of Latin America. They are considered a true superfood for a good reason, as they are packed with nutrients that support overall health. Although these tiny seeds look similar to poppy seeds, they have a remarkable ability to absorb liquid. As they soak, they swell and develop a gel-like texture, naturally transforming the liquid into a delicious pudding.
The easiest way to make chia pudding is to prepare it in the evening, so you'll wake up to a healthy, delicious, and beautiful breakfast the next morning
There are countless ways to make chia pudding. You can use any type of milk—I used almond milk this time. Kefir or yogurt also work well. Another option is to make a fruit or berry smoothie and stir in the chia seeds. You can even add cocoa powder for a rich chocolate version. If you like it sweeter, simply add honey or maple syrup.
As you can see, the possibilities and flavors are endless. This is just one of my favorite variations. The key to turning chia seeds into a perfectly creamy pudding is simply using the right ratio of seeds to liquid
2 cups almond milk (480 ml)
6 tbsp chia seeds
1 tsp vanilla extract
1 tbsp maple syrup
Fresh fruit, berries, and mint (optional)
Add the chia seeds to the almond milk.
Stir in the vanilla extract and maple syrup until well combined.
Stir the pudding occasionally until it thickens. Depending on the consistency of the liquid, this may take anywhere from 5 minutes to 1 hour.
Divide the pudding into jars and store in the refrigerator.
The pudding will become even thicker after a few hours of chilling
