This classic Mexican appetizer made with crispy corn tortilla chips, spicy salsa, and plenty of melted cheese. Some versions also include seasoned ground meat. They are often served in restaurants as a shareable starter, but they're incredibly easy to make at home
Ingredients
nacho corn tortilla chips
cheddar cheese (the more cheese, the better the nachos)
sour cream, for serving
For the Salsa
1 tomato
1 small shallot
1 clove garlic
1/2 jalapeño pepper (or to taste)
cilantro
1 tbsp freshly squeezed lemon or lime juice
salt to taste
Steps
Salsa
Finely dice the tomato and shallot
Finely chop the garlic, jalapeño, and cilantro
Add the lemon or lime juice and salt, then mix well
Arrange a layer of tortilla chips on a baking sheet
Generously sprinkle with grated cheddar cheese
Add a second layer of chips and sprinkle with more cheese
Bake in a preheated 200°C (390°F) oven for 2 minutes
Remove from the oven and top with the salsa, more cheese, and a few jalapeño slices
Return to the oven for another 2–3 minutes, until the cheese is fully melted
Serve immediately. Delicious served with sour cream for dipping the chips into
