Ingredients (for a 25 × 25 cm / 10 × 10-inch square baking dish)
24 ladyfingers
2 egg yolks
1/4 cup sugar (62 g)
2 tbsp Baileys liqueur (can be substituted with another liqueur or omitted)
250 g mascarpone
1 cup 35% cream (240 ml)
100 ml freshly brewed coffee
Cocoa powder for dusting
Steps
Beat the egg yolks with the sugar using an electric mixer
Add the mascarpone and liqueur and beat for another couple of minutes until smooth
In a separate bowl, whip the cream to soft peaks
Fold the whipped cream into the mascarpone mixture until combined
Dip each ladyfinger into the coffee for about 1 second on each side
Arrange a layer of ladyfingers in the dish
Spread half of the cream over the ladyfingers
Add a second layer of coffee-soaked ladyfingers
Cover with the remaining cream
Refrigerate for several hours, preferably overnight
Dust with cocoa powder before serving
