Mujadara is a Middle Eastern dish, especially popular in Lebanon. It’s made with rice, green lentils, and fried onions — and, of course, aromatic spices
1 cup basmati rice
1 cup green lentils
1 onion
1 red onion
salt, pepper
1 tsp ground allspice
1 tsp cinnamon
pomegranate seeds (optional)
Cook the rice and lentils separately. Cook the rice in rice cooker or use your favorite method. For the lentils: rinse under cold water, add water in a 1:2.5 ratio, bring to a boil, then simmer for 20–25 minutes. Salt at the end of cooking
Slice the onions and sauté in vegetable oil until golden
Add the rice and lentils to the onions, season with salt and spices, and mix well
Cover and let sit for about 5 minutes
