There’s no frying involved in this recipe. The sweet filling is wrapped in rice paper, and the little rolls are then baked in the oven until golden brown
Ingredients (makes 25 rolls)
For the Rice Paper Pancakes
25 sheets rice paper, 15 cm in diameter
1 cup hot water
1 egg yolk + 1 tsp milk
For the Filling
500 g farmer’s cheese (14%)
2 eggs
1/2 cup sour cream (120 ml)
2–3 tbsp powdered sugar
A handful of raisins (optional)
Sesame seeds, for sprinkling
Steps
Filling
Blend the farmer’s cheese, eggs, sour cream, and powdered sugar until smooth
Add the raisins and mix well
Rice Paper Pancakes
Dip the rice paper sheets, one at a time, in hot water until softened
Place about 1 tbsp of filling on each sheet and roll it up
Mix the egg yolk with the milk
Place the rolls on a baking sheet, lightly brush with the egg mixture, and sprinkle with sesame seeds
Bake in a preheated oven at 190°C (375°F) for 25 minutes, until golden brown
