Very tasty, crunchy cabbage with a bright, tangy flavour. The addition of cranberries gives it a slight sweet-sour note and makes the taste more interesting. This quick marinated version comes together easily and is ready by the next day
1 kg cabbage
1 medium carrot
1/2 cup cranberries (I used frozen)
1 liter water
2 tbsp salt
4 tbsp sugar
150 ml vinegar
5 cloves garlic
3 bay leaves
5–6 black peppercorns
Shred the cabbage
Grate the carrot on a coarse grater
Mix cabbage, carrot, and cranberries together and pack into glass jars
Bring water to a boil
Cut garlic cloves in half and add them to the water along with all other marinade ingredients
Stir until salt and sugar fully dissolve
Pour the hot marinade over the cabbage in the jars
Let cool completely, then refrigerate
The cabbage is ready the next day
