Fried rice is a classic everyday dish in Chinese cuisine. It’s quick to make, colourful, and easily adapted depending on what you have in the fridge. A key element is scrambled egg, and green peas are often used in the traditional version. Leftover, chilled rice works best, since it fries properly and doesn’t turn mushy like freshly cooked rice
2 cups cooked, cooled rice (basmati or calrose)
3 eggs
2 tbsp milk or water
1 medium carrot
1 cup frozen green peas
3 garlic cloves
1 bunch green onions
10 cooked tiger shrimp
5 tbsp soy sauce
a pinch of salt
vegetable oil for frying
Make the scrambled egg: whisk eggs with milk and quickly fry in vegetable oil over high heat, stirring constantly so they form soft scrambled pieces. Set aside.
Add a little more oil to the pan and sauté finely chopped carrot for about 2 minutes.
Add green peas, shrimp, chopped green onions, and garlic. Stir-fry for a few minutes, stirring constantly.
Add the rice, mix well, season with salt, pour in soy sauce, and stir-fry over high heat for about 3 minutes.
Add the scrambled egg pieces and mix everything together
