An interesting and very successful way to make sushi at home. Instead of traditional rolls, you get small baked nori cups filled with rice and toppings. It’s quick, simple, and incredibly delicious, with a warm texture and all the classic sushi flavours in one bite
3 sheets nori (seaweed for sushi)
1 cup cooked sticky rice
300–400 g fresh salmon fillet
1 avocado
spicy mayonnaise
sesame seeds (optional)
1 tsp sesame oil
1 tbsp soy sauce
1 tsp honey
Cut the salmon into cubes, add sesame oil, soy sauce, and honey, mix well, and let marinate for 5–10 minutes
Cut each nori sheet into 4 squares
Add 1 tsp cooked rice to each square and place into a muffin tin, forming small cups
Top with a few pieces of marinated salmon
Bake in a preheated oven at 180°C (350°F) for 20 minutes
Top the baked cups with avocado, drizzle with spicy mayonnaise, and sprinkle with sesame seeds if desired
