This classic Tuscan soup is traditionally made with chicken broth, Italian sausages, potatoes, and kale. Cream added at the end gives the soup its signature creamy texture and rich flavor. Here’s my version of this cozy and hearty dish
2.5 L chicken broth (If you don’t have chicken broth, just add a bouillon cube to boiling water)
5 strips raw bacon
500 g raw Italian sausages (~5 sausages)
1 large onion
5 garlic cloves
3 medium potatoes
4 kale sprigs
2 cups cream (18–35%) / 480 ml
1 tsp salt
1/2 tsp pepper
vegetable oil for cooking
grated Parmesan for serving
Place a pot with water or broth on the heat
Cut bacon into cubes and fry until crispy
Transfer bacon to a paper towel
Remove sausage meat from casing, add to a pan and cook, breaking it up, until done
Cut potatoes into cubes and add to boiling water/broth
Add cooked sausage to the pot
Dice onion and sauté in vegetable oil until translucent
Add finely chopped garlic and cook until onion is golden
Add onion and garlic to the pot and simmer on low heat for 10–15 minutes
Remove kale leaves from stems and chop finely
Add cream and kale to the soup, season with salt and pepper, bring to a boil and simmer for 2–3 minutes
Serve topped with crispy bacon and Parmesan
