Soft, tender, and very fluffy buns made with my favorite sweet yeast dough. I always use a bread machine for kneading the dough — it makes the process easy and convenient. Inside is a delicate ricotta and raisin filling
1 cup warm milk (240 ml)
1 egg
2 tbsp vegetable oil
1/3 cup honey
1 tbsp sugar
4 cups flour (500 g)
1 tsp salt
3.5 tsp dry yeast
400 g ricotta
1/4 cup powdered sugar (30 g)
2 egg yolks
1 tbsp starch
raisins
1 egg yolk
1 tsp milk (for brushing the buns)
Knead the dough using a bread machine
Mix ricotta, egg yolks, powdered sugar, and starch
Divide the finished dough into 8 equal pieces
Roll each piece into a circle about 15 cm in diameter
Spread filling over the dough and sprinkle with raisins
Roll each circle into a log
Make a lengthwise cut along the log, leaving about 2 cm uncut at one end
Twist the cut strips into a spiral shape, turning them outward
Place buns onto a baking sheet
Let the buns rise for 20–30 minutes
Brush with egg yolk mixed with milk
Bake in a preheated oven at 190°C (375°F) for 20–25 minutes until golden brown
