This dish will appeal to lovers of Mexican cuisine. Tortillas filled with meat are baked under a delicious, slightly spicy sauce. I recommend using corn tortillas. Despite the long description, the dish is quite quick to prepare, and the sauce is so good that it can also be used in other dishes
*Enchiladas can be filled with more than just ground beef, as described in my recipe. Chicken enchiladas are also very popular. You can also add black beans to the filling
*For those who like spicy food, I recommend using hot chili powder. I used a medium-heat spice (mild chili powder)
Ingredients
12 Corn Tortillas
For the Filling
500 g Ground Beef
1 Large Onion
Salt, Pepper
150 g Grated Cheese (I used Marble Cheese — a mixture of Cheddar and Mozzarella)
For the Sauce
3 tbsp. Vegetable Oil
2 tbsp. Flour
1 tbsp. Chili Powder
1 tsp. Cumin Powder
1/2 tsp. Garlic Powder
1/2 tsp. Salt
1/4 tsp. Pepper
2 tbsp. Tomato Paste
2 Cups Hot Broth (240 ml). Can be replaced with boiling water
Steps
Filling
Dice the onion and sauté in a pan with vegetable oil until translucent
Add the ground beef and, stirring, cook until the beef is done
Season with salt and pepper
Sauce
Heat the vegetable oil in a saucepan, add the salt and all the spices
Add the flour and tomato paste and, stirring constantly with a whisk, gradually add the hot broth/boiling water
Let the sauce simmer over low heat for 8–10 minutes, stirring occasionally
Pour a little vegetable oil into a pan and place the tortillas in it so they can warm up slightly on both sides
Warm tortillas are easier to work with
Assembly
Set aside about 3 tbsp. of the ground beef and 3 tbsp. of the cheese. They will be used to sprinkle over the tortillas
Lightly coat the bottom of the baking dish with some of the sauce
Dip each tortilla, one at a time, into the sauce on one side
Place 2 tbsp. of the ground beef and 1 tbsp. of the cheese on the sauced side and roll into a tube
Place the filled tortillas in the baking dish and pour the remaining sauce over them
Sprinkle with the reserved ground beef and cheese
Cover the dish with foil and bake in a preheated 180°C (350°F) oven for 20 min
Remove the foil and bake for another 10 min
