For the cake
2 eggs
1 cup sugar (250 g)
1 tsp vanilla
1/4 cup vegetable oil (60 ml)
3/4 cup hot coffee (180 ml)
3/4 cup milk (180 ml)
1 tsp vinegar
1 1/2 cups flour (190 g)
1/2 cup cocoa powder (60 g)
1 tsp baking powder
1 tsp baking soda
Pinch of salt
For the chocolate glaze
1/3 cup heavy cream 35% (80 ml)
100 g chocolate (I used milk chocolate chips)
Cake
Add vinegar to the milk, stir, and set aside
Whisk eggs with sugar and vanilla until smooth and slightly airy
Add vegetable oil, coffee, and the milk mixture to the eggs and mix well
In a separate bowl, combine all dry ingredients
Add dry ingredients to the wet mixture and mix until smooth and combined
Pour into prepared loaf pans
Bake in a preheated 180°C (350°F) oven for 30–40 minutes, or until a toothpick comes out clean
Glaze
Heat the cream until just boiling, then remove from heat
Add the chocolate and stir until fully melted and smooth
Pour the warm glaze over the cooled cakes
