Pasta e Fagioli is a thick Italian soup made with ground meat, tomatoes, pasta, and beans. It’s a simple, hearty dish with a rich flavor that is especially comforting on cold days
2.5 L beef broth or water
500–700 g ground beef
1 large onion
3 garlic cloves
1 medium carrot
2 celery stalks
1 can canned tomatoes in their juices (800 ml)
200 g pasta (dry, uncooked)
1 can canned beans (540 g)
1 tbsp sugar
salt and pepper to taste
1 tbsp dried Italian herbs
parsley
vegetable oil for frying
Bring the broth or water to a boil
Sauté the ground beef in vegetable oil until the liquid evaporates
Dice the onion, carrot, and celery, and finely chop the garlic
Add the vegetables to the beef and cook until the onion turns golden
Add the canned tomatoes and bring to a boil
Transfer everything into the pot with the broth and add the pasta
Season with salt, pepper, sugar, and Italian herbs
Cook until the pasta is done
Add the beans and chopped parsley
Simmer for a few more minutes
