Boil the potatoes in salted water until fully cooked (do not overcook)
Transfer the potatoes to a baking tray lined with parchment paper and gently smash them using a potato masher
Season with salt, pepper, and garlic powder, then drizzle with olive oil
Bake in a preheated oven at 200°C (390°F) for 15 minutes
Flip the potatoes, season again with salt, pepper, garlic powder, and olive oil
Bake for another 10 minutes on the other side
Remove from the oven, sprinkle with Parmesan, and bake for 2 more minutes
Finish with fresh herbs before serving
