What does it take to make a “lazy” pilaf? You just have to be a little lazy lol.
All you need is about 30 minutes, some rice, chicken breast, a few vegetables, and plenty of aromatic spices. It’s the spices that turn even a simple dish into something rich and flavorful
1.5 cups rice (I used basmati)
2 chicken breasts
2 large onions
1 large carrot
4 garlic cloves
1/4 cup water
1 tsp curry powder
1 tsp paprika
1 tsp turmeric
1 tsp ground cumin
1 tsp dried dill
a pinch of saffron
salt to taste
vegetable oil for frying
Cook the rice until done
Season the chicken breasts with salt and cut into strips
Slice the onions, dice the carrot, and chop the garlic
Sauté the onions and carrot in vegetable oil over medium heat until golden
Add the chicken and garlic, cook until the chicken is done
Pour in the water and mix
Add the cooked rice and all the spices, season with salt, and mix well
Cover and simmer for about 5 minutes
