This is truly a dry fruit loaf cake, not just a cake with dried fruit. In this recipe there are so many dried fruits and nuts and very little batter, which makes it incredibly rich, dense, and full of flavor. Every bite is packed with natural sweetness, texture, and warmth. It’s the kind of cake that feels both indulgent and wholesome at the same time
300–400 g mixed nuts and dried fruits
(I used dried apricots, two types of raisins, prunes, dried cranberries, figs, and walnuts)
3 eggs
3 tbsp flour
1/2 tsp baking powder
Chop the dried apricots and prunes into small pieces
Mix all dried fruits and nuts together in a large bowl
Lightly whisk the eggs with a fork and add them to the fruit mixture
Add flour, and baking powder. Mix until everything is well combined
Pour the mixture into a prepared baking pan
Bake in a preheated 190°C (375°F) oven for 30–40 minutes.
