Quinoa is not only incredibly healthy but also a very versatile grain. It has a mild, neutral taste, which makes it easy to combine with almost anything. Since quinoa is a frequent part of my cooking, I like to constantly change its flavor by adding different vegetables, spices, and sauces
1 cup quinoa
2 cups water
3 eggs
1/8 cup milk (30 ml)
1 medium carrot
2 celery stalks
2 garlic cloves
100 g canned corn
100 g frozen green peas
a few green onion stalks
5 tbsp soy sauce (I use low-sodium soy sauce)
4 tbsp sweet chili sauce
salt and black pepper to taste
vegetable oil and butter for cooking
Cook the quinoa in salted water until done
Whisk the eggs with milk, lightly season with salt, and cook an omelet in butter
Let the omelet cool, then cut into cubes
Dice the carrot and celery and sauté in vegetable oil for about 3 minutes, stirring
Add minced garlic and green onions and cook for another minute
Add corn and peas and cook for a couple more minutes
Add quinoa, season with soy sauce and sweet chili sauce, add black pepper, and mix well
Add the omelet cubes, gently combine, and remove from heat
Before serving, garnish with green onions
