Almond crescent cookies are a classic holiday treat often made for Christmas and other celebrations. Ingredients (makes 64 cookies)
1 cup ground almonds (100 g)
1/2 cup sugar (125 g)
2.5 cups all-purpose flour (310 g)
300 g unsalted butter, room temperature
1 tsp vanilla extract
1/3 cup powdered sugar (40 g)
Steps
Mix all ingredients except the powdered sugar and knead into a dough
The dough should be smooth and not sticky
If the dough is too sticky, add a little flour
If it is too crumbly and hard to shape, add a little ice water
Optionally chill the dough in the fridge for 30 minutes to make it easier to handle
Roll the dough into balls about 2.5 cm in diameter
Shape each ball into a crescent
Bake in a preheated oven at 180°C (350°F) for 20 minutes
While still warm, roll the cookies in powdered sugar
