A delicious cheesecake-casserole-cake — an original recipe of my own creation. I wanted to give this cheesecake an unusual, slightly grainy texture, and the dried fruit added even more flavour
3 eggs
1/2 cup sugar (125 g)
1 cup semolina (170 g)
450 g Philadelphia cream cheese
1 tsp vanilla
1 cup dried fruit (I used raisins, cranberries, figs, and dried apricots)
Using a mixer, beat the egg whites until stiff peaks form and set aside
Beat the cream cheese with the sugar and egg yolks
Continuing to beat, add the semolina and vanilla
Add the beaten egg whites and gently mix
Cut the dried fruit into small pieces, except for the raisins, add to the mixture and mix
Bake in a preheated oven at 180°C (350°F) for 30–35 minutes
Refrigerate for several hours to cool
Decorate with chocolate and berries, if desired
